Domaine Hubert Lamy 由 Hubert Lamy 於1973年創立，家族葡萄農歷史可追溯到1640年，依家由第二代Olivier Lamy主理。Oliver Lamy係Burgundy數一數二既優秀釀酒師， 接手家族酒莊前周遊列國學釀酒，更曾經係著名既Méo-Camuzet酒莊追隨Jean-Nicolas Meo學習biodynamics生物動力自然農法，係2008年被法國雜誌選為支撐起Burgundy未來十年的十名釀酒師，光芒四射。

莊園共 18.5 公頃葡萄園，橫跨Saint-Aubin、Puligny-Montrachet、Chassagne-Montrachet，甚至持有Criots-Bâtard-Montrachet特級園，以高密度種植、低硫、輕橡木、長桶陳工藝聞名，風格純淨礦感突出，被業界譽為「高性價Montrachet平替」。

Saint Aubin係近年酒迷之間口耳相傳嘅超值村莊，位於Puligny Montrachet同Chassagne Montrachet兩者之間背斜谷嘅山坡。La Princée呢塊田位于Saint-Aubin村西坡，約3公頃，黏土–石灰岩為主，係Saint-Aubin白酒清瘦骨架嘅來源。關于呢塊田，據說原本係種Pinot Noir，Olivier判斷佢嘅土質更適合Chardonnay，所以先改種——而呢個決策後來被證明係非常正確，因為la Princée成酒質素高，現時已經成為莊園村級白酒嘅招牌。

2023年份嘅呢支酒有檸檬、葡萄柚皮、鮮蘋果、梨、白花同新鮮榛果香氣，帶白堊礦物感；口感純淨、張力好、偏修長質地，收尾有鹹鮮且余韻長。

TASTING NOTE BY WINE CRITICS

Only two hectares are currently in production out of their three because of the 161/49 rootstock issue. They are replanting with their own selection of vines plus a mix of rootstocks. A paler lemon and lime colour with impressive and chiselled fruit energy. Very much in the leaner idiom of St-Aubin but with exceptional intensity. Very persistent, apples to finish.
