【澳洲殿堂級名莊｜重新定義「現代澳洲白酒」】

1989年由澳洲首位葡萄酒大師MW Michael Hill Smith+資深釀酒師Martin Shaw（表兄弟）聯手創立，是Adelaide Hills冷涼白酒風格開創者、澳洲最著名酒評家James Halliday澳洲 top 100酒莊。

酒莊自2000年起於Balhannah建立自有酒廠，並擁有Lenswood、Piccadilly、Lobethal​等高海拔園區，以手工採收與精準釀造聞名，被視為澳洲現代Chardonnay與Sauvignon Blanc的雙線標桿代表酒莊。

在釀酒方面，堅持輕干預釀造，引進Burgundy傳統工藝釀造Chardonnay，打破澳洲厚重油潤型Chardonnay刻板印象，走優雅克制路線，被譽「澳洲平替Burgundy白酒天花板」。

【釀造工藝】

展現了「克制中的豐富」。採用野生酵母於法國橡木桶中發酵，並進行酒泥攪動。不僅賦予酒液堅果與麵包團的香氣，更創造出 M3 標誌性的「綿密質地」，同時保留了冷涼產區的礦物鹹感。

【品飲筆記】

香氣融合檸檬凝乳、白油桃與燧石；酸度富有張力，中段飽滿圓潤，收尾帶有酥脆餅乾與礦物回甘。建議冰鎮至10-11°C並醒酒20分鐘，搭配烤雞或海鮮極佳。

TASTING NOTE BY WINE CRITICS

Wonderfully constructed, showing polished aromas of lime curd, lemon balm, orange blossoms and gun smoke on the nose. The palate is medium-bodied with precise acidity and a generous mouthfeel, giving notes of fresh pineapple, white peaches, lime curd and shortbread.
