【Bruno Paillard —— 追求絕對純淨的香檳藝術家​】

同好多歷史動輒數百年嘅香檳大廠唔同，Bruno Paillard 係一個相對年輕嘅品牌，但佢對品質嘅堅持、以及創新嘅理念令它喺短短幾十年內就躋身頂級香檳之列。

Bruno Paillard 由一開始就堅定咁向低補糖同強調純淨果味嘅方向發展，喺當時來講可以話係非常前衛嘅做法。另外，酒莊仲堅持超長嘅酒泥陳年時間。長時間嘅酒泥接觸，會賦予酒體極高嘅複雜度、圓潤口感同烤麵包、餅乾般嘅香氣，而無需依賴高劑量的糖分來平衡。

Première Cuvée Extra Brut 係品牌嘅入門款（但絕對係頂級入門），由超過25個不同年份的基酒同超過35個特級村（Grand Cru）與一級村（Premier Cru）嘅葡萄酒混釀而成，複雜得來又平衡。

TASTING NOTE BY WINE CRITICS

A blend of 45% Pinot Noir, 33% Chardonnay and 22% Pinot Meunier, Paillard’s NV Extra-Brut Première Cuvée (disgorged in June 2022 with 5.5 grams per liter) expresses an elegant and fresh bouquet with aromas of citrus oil, lemon, spring flowers, pomelo and pastry touches. Medium to full-bodied, crystalline and vibrant, it’s complemented by a delicate mousse and chalky finish.
